Mango Pudding
This is a refreshing and fruity dessert, perfect for a hot summer day or after a heavy meal.
Ingredients - Serves 4
- Vanilla extract - 1 teaspoon
- Water - 1/2 cup
- Milk - 1/2 cup
- Sugar - 1/2 cup
- Unflavored gelatin - 1 packet
- Ripe mangoes - 2 large
Let's Get Started
- Peel the mangoes and remove the pit. Cut into chunks and puree in a blender until smooth.
- In a small bowl, sprinkle the gelatin over the water and let stand for 5 minutes to soften.
- In a saucepan, combine the sugar and milk. Heat over medium heat until the sugar is dissolved.
- Add the softened gelatin to the saucepan and stir until the gelatin is dissolved.
- Remove from heat and stir in the mango puree and vanilla extract.
- Pour the mixture into individual serving dishes or a large serving dish.
- Refrigerate for at least 2 hours, or until the pudding is set.
- Serve chilled.
