  1. Peel the mangoes and remove the pit. Cut into chunks and puree in a blender until smooth.
  2. In a small bowl, sprinkle the gelatin over the water and let stand for 5 minutes to soften.
  3. In a saucepan, combine the sugar and milk. Heat over medium heat until the sugar is dissolved.
  4. Add the softened gelatin to the saucepan and stir until the gelatin is dissolved.
  5. Remove from heat and stir in the mango puree and vanilla extract.
  6. Pour the mixture into individual serving dishes or a large serving dish.
  7. Refrigerate for at least 2 hours, or until the pudding is set.
  8. Serve chilled.
