Roasted Vegetable and Goat Cheese Sandwich

Ingredients - Serves 2
- Balsamic glaze - 2 tablespoons
- Baby spinach - 1 cup
- Ciabatta bread - 1 loaf, sliced
- Goat cheese - 4 ounces
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Eggplant - 1/2, sliced
- Yellow bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Zucchini - 1, sliced
Let's Get Started
- Preheat the oven to 400°F.
- Place the sliced zucchini, red bell pepper, yellow bell pepper, and eggplant on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat the vegetables evenly.
