Roasted Vegetable and Goat Cheese Sandwich

  1. Preheat the oven to 400°F.
  2. Place the sliced zucchini, red bell pepper, yellow bell pepper, and eggplant on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat the vegetables evenly.
  4. Roast in the oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  5. Remove from the oven and let cool slightly.
  6. Spread goat cheese on one side of each slice of ciabatta bread.
  7. Layer the roasted vegetables and baby spinach on top of the goat cheese.
  8. Drizzle with balsamic glaze.
  9. Close the sandwich with another slice of ciabatta bread.
  10. Heat a pan or grill pan over medium heat.
  11. Place the sandwich in the pan and cook for 2-3 minutes on each side, or until the bread is toasted and the cheese is melted.
  12. Remove from the pan and let cool for a few minutes before serving.
  13. Slice the sandwich in half and serve warm.
