Roasted Pea and Garlic Dip

Let's Get Started

  1. Preheat the oven to 400°F (200°C).
  2. Spread the frozen peas on a baking sheet and drizzle with olive oil. Toss to coat evenly.
  3. Add the garlic cloves to the baking sheet.
  4. Roast in the oven for 15-20 minutes, or until the peas are slightly golden and the garlic is soft.
  5. Remove from the oven and let cool for a few minutes.
  6. In a food processor, combine the roasted peas, garlic, lemon juice, Greek yogurt, chopped mint leaves, salt, and black pepper.
  7. Blend until smooth and creamy.
