Roasted Pea and Garlic Dip
This creamy and flavorful dip is made with roasted peas, garlic, and a hint of lemon.
Ingredients - Serves 6
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Fresh mint leaves - 2 tablespoons, chopped
- Greek yogurt - 1/2 cup
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Garlic cloves - 4 cloves
- Frozen peas - 2 cups
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Spread the frozen peas on a baking sheet and drizzle with olive oil. Toss to coat evenly.
- Add the garlic cloves to the baking sheet.
- Roast in the oven for 15-20 minutes, or until the peas are slightly golden and the garlic is soft.

- In a food processor, combine the roasted peas, garlic, lemon juice, Greek yogurt, chopped mint leaves, salt, and black pepper.
