Roasted Leg of Lamb

- Olive oil - 2 tablespoons
- Lemon zest - 1 tablespoon

- Garlic cloves - 6, minced
- Leg of lamb - 1 (about 5 pounds)

- Preheat your oven to 350°F (175°C).
- In a small bowl, combine the minced garlic, chopped rosemary, lemon zest, olive oil, salt, and pepper.
- Place the leg of lamb in a roasting pan. Rub the garlic-rosemary mixture all over the lamb.
