Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out under cold running water. Dry well with paper towels.
  3. Season the chicken inside and out with salt and pepper.
  4. Drizzle the olive oil over the chicken and rub it in with your hands.
  5. Stuff the cavity with the lemon halves, thyme sprigs, and garlic cloves.
  6. Place the chicken on a rack in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  7. Remove the chicken from the oven and let it rest for 15 minutes before carving.
