Ingredients - Serves 4
- Garlic - 4 cloves, peeled
- Fresh thyme - 4 sprigs
- Lemon - 1, halved
- Olive oil - 2 tablespoons
- Black pepper - 1 teaspoon
- Salt - 1 tablespoon
- Whole chicken - 1 (about 4 pounds)
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out under cold running water. Dry well with paper towels.
- Season the chicken inside and out with salt and pepper.
- Drizzle the olive oil over the chicken and rub it in with your hands.
- Stuff the cavity with the lemon halves, thyme sprigs, and garlic cloves.
- Place the chicken on a rack in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
