Risotto with Bacon and Caramelized Onions
This creamy risotto is loaded with crispy bacon and sweet caramelized onions for a comforting and delicious meal.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Butter - 2 tablespoons
- Chicken broth - 4 cups
- White wine - 1/2 cup
- Arborio rice - 1 cup
- Olive oil - 2 tablespoons
- Onions - 2 large, thinly sliced
- Bacon - 6 slices, chopped
Let's Get Started
- Cook the bacon in a large pan until crispy. Remove from the pan and set aside.
- In the same pan, add the onions and cook over medium heat until caramelized, about 15 minutes.
- In a separate pot, heat the olive oil over medium heat. Add the rice and cook until toasted, about 2 minutes.
- Add the wine to the rice and stir until absorbed.
- Add the chicken broth to the rice, one cup at a time, stirring constantly until the broth is absorbed before adding the next cup.
- Once all the broth has been absorbed and the rice is creamy, stir in the butter, Parmesan cheese, and cooked bacon.
- Season with salt and pepper to taste.
- Serve the risotto topped with the caramelized onions.
