Risotto with Bacon and Caramelized Onions

Ingredients - Serves 4

Let's Get Started

  1. Cook the bacon in a large pan until crispy. Remove from the pan and set aside.
  2. In the same pan, add the onions and cook over medium heat until caramelized, about 15 minutes.
  3. In a separate pot, heat the olive oil over medium heat. Add the rice and cook until toasted, about 2 minutes.
  4. Add the wine to the rice and stir until absorbed.
  5. Add the chicken broth to the rice, one cup at a time, stirring constantly until the broth is absorbed before adding the next cup.
  6. Once all the broth has been absorbed and the rice is creamy, stir in the butter, Parmesan cheese, and cooked bacon.
  7. Season with salt and pepper to taste.
  8. Serve the risotto topped with the caramelized onions.
