Ricotta Gnocchi
This is a simple and delicious recipe for homemade ricotta gnocchi served with a savory tomato sauce.
Ingredients - Serves 4
- Basil - A handful, chopped
- Tomato sauce - 2 cups
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Flour - 1 cup
- Egg - 1 large
- Parmesan cheese - 1/2 cup, grated
- Ricotta cheese - 2 cups
Let's Get Started
- In a large bowl, combine the ricotta, Parmesan, egg, flour, and salt. Mix until a dough forms.
- On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope, then cut into 1-inch pieces.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Drain.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the tomato sauce and bring to a simmer. Cook for 10 minutes.
- Add the cooked gnocchi to the skillet and stir to coat in the sauce. Cook for another 2-3 minutes.
- Serve the gnocchi with a sprinkle of chopped basil on top.
