Rice Pilaf
This flavorful rice pilaf is made with aromatic spices, vegetables, and fluffy basmati rice.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Chicken or vegetable broth - 2 cups
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Carrot - 1 medium, finely chopped
- Onion - 1 medium, finely chopped
- Butter - 2 tablespoons
- Basmati rice - 1 cup
Let's Get Started
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- In a large skillet, melt the butter over medium heat.
- Add the chopped onion, carrot, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the cumin, turmeric, cinnamon, salt, and black pepper. Stir well to coat the vegetables with the spices.
- Add the drained basmati rice to the skillet and stir to combine with the vegetables and spices.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the skillet from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and sprinkle with fresh chopped parsley before serving.
