Revithada
Revithada is a traditional Greek chickpea stew, slow-cooked with onions, olive oil, and herbs. It's a hearty and healthy dish that's perfect for cold winter nights.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaves - 2
- Dried oregano - 1 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 1/4 cup
- Garlic - 3 cloves, minced
- Onions - 2 large, finely chopped
- Dried chickpeas - 2 cups
Let's Get Started
- Soak the chickpeas in water overnight, then drain.
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook until soft and golden.
- Add the chickpeas, lemon juice, oregano, bay leaves, salt, and pepper. Add enough water to cover the chickpeas by about 2 inches.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 2 hours, or until the chickpeas are tender.
- Check the stew occasionally, adding more water if necessary.
- Serve the revithada warm, with a drizzle of olive oil and a squeeze of lemon juice.
