Red Pepper Ramen
This spicy and flavorful red pepper ramen is made with a rich broth, tender noodles, and topped with fresh vegetables.
Ingredients - Serves 2
- Soft-boiled eggs - 2
- Bean sprouts - 1 cup
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Sriracha sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Red bell pepper - 1, thinly sliced
- Ramen noodles - 2 packs
Let's Get Started
- Cook the ramen noodles according to package instructions. Drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add red bell pepper slices and cook for another 2-3 minutes until slightly softened.
- Pour in vegetable broth, soy sauce, and sriracha sauce. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Divide the cooked ramen noodles into serving bowls.
- Ladle the hot broth over the noodles, making sure to distribute the red bell pepper slices evenly.
- Top with chopped green onions, bean sprouts, and soft-boiled eggs.
