- Fresh thyme - 1 tablespoon
- Fresh basil leaves - 1/2 cup, chopped
- Tomatoes - 5, peeled and chopped
- Bell peppers - 2, cut into cubes
- Zucchini - 2, cut into cubes
- Eggplant - 1 large, cut into cubes
- Garlic cloves - 2, minced
- Onions - 2, chopped
- Olive oil - 3 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the eggplant, zucchini, and bell peppers. Cook until the vegetables are slightly soft, about 10 minutes.
- Add the tomatoes, basil, thyme, salt, and pepper. Reduce the heat to low, cover the pot, and cook for 30 minutes.
- Uncover the pot and cook for an additional 15 minutes, until the vegetables are tender and the flavors have melded together.
- Serve the ratatouille warm or at room temperature.
