Raspberry Jam Bomboloni
Bomboloni are Italian filled doughnuts and are eaten as a snack and dessert. This recipe is for a raspberry jam version.
Ingredients - Serves 12
- Powdered sugar - For dusting
- Raspberry jam - 1 cup
- Salt - 1/2 teaspoon
- All-purpose flour - 4 cups
- Vanilla extract - 1 teaspoon
- Butter - 3 tablespoons, melted
- Eggs - 2
- Active dry yeast - 1 packet
- Sugar - 1/2 cup
- Milk - 1 cup
Let's Get Started
- Warm the milk and pour into a bowl. Stir in the sugar and yeast. Let sit for 5 minutes until the yeast is foamy.
- Beat in the eggs, butter, and vanilla extract.
- In a separate bowl, combine the flour and salt. Gradually add the dry ingredients to the wet, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours, until doubled in size.
- Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and place on a lined baking sheet. Cover and let rise for another 30 minutes.
- Heat oil in a deep fryer or large pot to 375°F. Fry the doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels.
- Once the doughnuts are cool enough to handle, make a small hole in the side of each one. Fill a piping bag with the raspberry jam and pipe some into each doughnut.
- Dust the bomboloni with powdered sugar before serving.
