Raspberry Jam Bomboloni

Ingredients - Serves 12

Let's Get Started

  1. Warm the milk and pour into a bowl. Stir in the sugar and yeast. Let sit for 5 minutes until the yeast is foamy.
  2. Beat in the eggs, butter, and vanilla extract.
  3. In a separate bowl, combine the flour and salt. Gradually add the dry ingredients to the wet, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours, until doubled in size.
  6. Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and place on a lined baking sheet. Cover and let rise for another 30 minutes.
  7. Heat oil in a deep fryer or large pot to 375°F. Fry the doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels.
  8. Once the doughnuts are cool enough to handle, make a small hole in the side of each one. Fill a piping bag with the raspberry jam and pipe some into each doughnut.
  9. Dust the bomboloni with powdered sugar before serving.
