Let's Get Started

  1. Preheat the oven to 350°F and line three 9x5-inch loaf pans with parchment paper.
  2. In a large mixing bowl, crumble the almond paste and add the softened butter. Mix until well combined.
  3. Add the sugar and beat until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter into three equal portions. Leave one portion plain, and add red food coloring to one portion and green food coloring to another portion. Mix until the colors are evenly distributed.
  7. Spread the plain batter evenly into one of the prepared loaf pans. Repeat with the red and green batters in the remaining pans.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.
  9. Once cooled, spread a thin layer of apricot jam on top of the green layer. Place the plain layer on top, followed by another layer of apricot jam. Finally, place the red layer on top.
  10. Cover the stacked layers with plastic wrap and place a heavy object on top to compress the layers. Refrigerate for at least 2 hours, or overnight.
  11. Remove the plastic wrap and trim the edges of the stacked layers to create clean edges. Cut the layered cake into small rectangular cookies.
  12. Dip each cookie halfway into the melted semisweet chocolate and place on a wire rack to set.
