Quinoa Veggie Burger
A delicious and healthy alternative to traditional burgers, these quinoa veggie burgers are packed with protein and flavor.
Ingredients - Serves 4
- Salt and pepper - To taste
- Egg - 1
- Bread crumbs - 1/2 cup
- Black beans - 1 can, drained and rinsed
- Spinach - 1 cup, chopped
- Carrot - 1, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water and drain. Bring water to a boil in a saucepan, then add the quinoa. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the carrot and spinach to the skillet and cook until the spinach is wilted, about 2 minutes.
- In a large bowl, mash the black beans with a fork. Stir in the cooked quinoa, vegetable mixture, bread crumbs, egg, salt, and pepper.
- Form the mixture into four patties.
- Heat a large skillet over medium heat. Add the patties and cook until browned and heated through, about 4 minutes per side.
