Quinoa Veggie Burger

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water and drain. Bring water to a boil in a saucepan, then add the quinoa. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed.
  2. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the carrot and spinach to the skillet and cook until the spinach is wilted, about 2 minutes.
  4. In a large bowl, mash the black beans with a fork. Stir in the cooked quinoa, vegetable mixture, bread crumbs, egg, salt, and pepper.
  5. Form the mixture into four patties.
  6. Heat a large skillet over medium heat. Add the patties and cook until browned and heated through, about 4 minutes per side.
