Quinoa and Black Bean Stuffed Peppers
These hearty stuffed peppers are filled with quinoa and black beans for a satisfying vegetarian meal.
Ingredients - Serves 4
- Cheese - 1 cup, shredded
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Bell peppers - 4 large
- Black beans - 1 can, drained and rinsed
- Quinoa - 1 cup
Let's Get Started
- Preheat the oven to 375°F.
- Cook the quinoa according to the package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
