Quinoa and Black Bean Salad
This healthy and hearty salad is packed with protein-rich quinoa and fiber-rich black beans. It's perfect for a light lunch or a side dish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Corn - 1 cup, frozen or fresh
- Red bell pepper - 1, diced
- Black beans - 1 can, drained and rinsed
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and the water has been absorbed, about 15 minutes.
- In a large bowl, combine the cooked quinoa, black beans, red bell pepper, corn, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve the salad chilled or at room temperature.
