Quinoa & Black Beans
This is a flavorful and nutritious vegetarian dish that's packed with proteins and fiber.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Cumin - 1/2 teaspoon
- Black beans - 1 can, drained and rinsed
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
- Vegetable broth - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a saucepan, bring the vegetable broth to a boil.
- Add the quinoa to the boiling broth, reduce the heat to low, cover, and let simmer for 15 minutes.
- While the quinoa is cooking, heat the olive oil in a skillet over medium heat.
- Add the onion and garlic to the skillet and sauté until the onion is translucent.
- Stir in the black beans and cumin, and cook until heated through.
- Fluff the cooked quinoa with a fork and mix in the black bean mixture.
- Stir in the chopped cilantro and season with salt and pepper before serving.
