Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a saucepan, bring the vegetable broth to a boil.
  3. Add the quinoa to the boiling broth, reduce the heat to low, cover, and let simmer for 15 minutes.
  4. While the quinoa is cooking, heat the olive oil in a skillet over medium heat.
  5. Add the onion and garlic to the skillet and sauté until the onion is translucent.
  6. Stir in the black beans and cumin, and cook until heated through.
  7. Fluff the cooked quinoa with a fork and mix in the black bean mixture.
  8. Stir in the chopped cilantro and season with salt and pepper before serving.
