Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the egg yolks and sugar until well combined.
  3. Add the shredded coconut, melted butter, vanilla extract, and water. Mix until smooth.
  4. In a small saucepan, heat the sugar for caramel over medium heat until it melts and turns golden brown.
  5. Pour the caramel into a 9-inch round cake pan, swirling to coat the bottom evenly.
  6. Pour the quindim mixture into the caramel-coated pan.
  7. Place the cake pan in a larger baking dish. Fill the larger dish with hot water, about halfway up the sides of the cake pan.
  8. Bake for 40 minutes, or until the quindim is set and golden on top.
  9. Remove from the oven and let it cool completely.
  10. Refrigerate for at least 2 hours before serving.
  11. To serve, run a knife around the edges of the pan and invert the quindim onto a serving plate.
