Quindim
Quindim is a traditional Brazilian dessert made with egg yolks, sugar, coconut, and butter.
Ingredients - Serves 8
- Sugar - 1/2 cup (for caramel)
- Water - 1/2 cup
- Vanilla extract - 1 teaspoon
- Butter - 1/2 cup, melted
- Shredded coconut - 1 cup
- Sugar - 1 cup
- Egg yolks - 10
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the egg yolks and sugar until well combined.
- Add the shredded coconut, melted butter, vanilla extract, and water. Mix until smooth.
- In a small saucepan, heat the sugar for caramel over medium heat until it melts and turns golden brown.
- Pour the caramel into a 9-inch round cake pan, swirling to coat the bottom evenly.
- Pour the quindim mixture into the caramel-coated pan.
- Place the cake pan in a larger baking dish. Fill the larger dish with hot water, about halfway up the sides of the cake pan.
- Bake for 40 minutes, or until the quindim is set and golden on top.
- Remove from the oven and let it cool completely.
- Refrigerate for at least 2 hours before serving.
- To serve, run a knife around the edges of the pan and invert the quindim onto a serving plate.
