Pyongyang Doenjang
Pyongyang Doenjang is a traditional Korean fermented soybean paste stew that is rich in flavor and packed with nutritious ingredients.
Ingredients - Serves 4
- Salt - To taste
- Red pepper flakes - 1 teaspoon
- Green onions - 2, chopped
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Potato - 1, diced
- Zucchini - 1, sliced
- Tofu - 1 block, cubed
- Water - 4 cups
- Doenjang (korean fermented soybean paste) - 1/2 cup
Let's Get Started
- In a large pot, combine the water and doenjang. Stir well to dissolve the doenjang.
- Add the tofu, zucchini, potato, onion, garlic, sesame oil, soy sauce, sugar, green onions, red pepper flakes, and salt. Mix well.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
- Taste and adjust the seasoning if needed.
- Serve hot with steamed rice.
