Puolukkapiirakka
Puolukkapiirakka is a traditional Finnish lingonberry pie. It has a sweet and tart filling with a buttery crust.
Ingredients - Serves 8
- Whipped cream - For serving
- Cornstarch - 2 tablespoons
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Lingonberries - 2 cups, fresh or frozen
- Egg - 1
- Granulated sugar - 1/2 cup
- Butter - 1 cup, cold and cubed
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour and granulated sugar. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- In a separate bowl, mix together the lingonberries, brown sugar, cinnamon, and cornstarch.
- On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch pie dish. Transfer the dough to the pie dish and press it into the bottom and sides.
- Pour the lingonberry mixture into the pie crust.
- Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove from the oven and let cool before serving.
- Serve with whipped cream on top.
