Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour and granulated sugar. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. In a separate bowl, mix together the lingonberries, brown sugar, cinnamon, and cornstarch.
  5. On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch pie dish. Transfer the dough to the pie dish and press it into the bottom and sides.
  6. Pour the lingonberry mixture into the pie crust.
  7. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and let cool before serving.
  9. Serve with whipped cream on top.
