- Reduce the heat to low and simmer for about 15 minutes, or until the syrup reaches a caramel color.
- In a separate bowl, beat the egg yolks until they are well mixed.
- Slowly pour the hot syrup into the egg yolks, stirring constantly to prevent the eggs from curdling.
- Pour the mixture into a caramelized mold, cover with aluminum foil, and bake in a water bath at 180°C (350°F) for about 45 minutes, or until the pudding is set.
- Remove from the oven and let cool completely before unmolding.
