Leche Frita, or 'fried milk', is a traditional Spanish dessert. It's a sweet, custard-like dessert that's breaded and fried, then dusted with sugar and cinnamon.
Ingredients - Serves 4
- Cinnamon and sugar - For dusting
- Vegetable oil - For frying
- Breadcrumbs - For coating
- Flour - For dusting
- Eggs - 2, beaten
- Lemon peel - 1 strip
- Cinnamon stick - 1
- Cornstarch - 1/2 cup
- Sugar - 1 cup
- Milk - 4 cups
Let's Get Started
- In a saucepan, combine the milk, sugar, cornstarch, cinnamon stick, and lemon peel. Stir until the sugar and cornstarch are dissolved.
- Heat the mixture over medium heat, stirring constantly, until it thickens to a custard-like consistency.
- Pour the custard into a square dish lined with plastic wrap. Smooth the top and let it cool to room temperature, then refrigerate until firm.
- Once firm, cut the custard into squares. Dip each square in beaten egg, then in flour, and finally in breadcrumbs.
- Heat the vegetable oil in a frying pan over medium-high heat. Fry the squares until golden brown on all sides.
- Drain the fried squares on paper towels, then dust with a mixture of cinnamon and sugar before serving.
