Protein Packed Minestrone Soup

Ingredients - Serves 6
- Salt and pepper - To taste
- Spinach - 2 cups
- Quinoa - 1/2 cup
- Canned kidney beans - 1 can (15 oz), drained and rinsed
- Vegetable broth - 6 cups
- Canned diced tomatoes - 1 can (14.5 oz)
- Zucchini - 1, chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery and cook until the vegetables are soft, about 5 minutes.
- Add the zucchini and cook for another 2 minutes.
- Add the diced tomatoes, vegetable broth, kidney beans, and quinoa. Bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the quinoa is cooked.
- Add the spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste.
