Prawn Stuffed Mushrooms
These delicious prawn stuffed mushrooms are a perfect appetizer for any occasion.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 1/4 cup, grated
- Breadcrumbs - 1/2 cup
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Prawns - 200g, peeled and deveined
- Large mushrooms - 12
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet.
- Finely chop the mushroom stems.
- Heat olive oil in a pan over medium heat. Add garlic and onion, and sauté until softened.
- Add the chopped mushroom stems and prawns to the pan. Cook until the prawns are pink and cooked through.
- Remove from heat and let it cool slightly. Then, transfer the mixture to a bowl.
- Add breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper to the bowl. Mix well.
- Spoon the prawn mixture into the mushroom caps, filling each cap generously.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve hot and enjoy!
