Prawn Linguine
A delicious and easy to make seafood pasta dish with a hint of chilli.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - A handful, chopped
- Cherry tomatoes - 200 grams, halved
- White wine - 150 ml
- Prawns - 400 grams, peeled and deveined
- Red chilli - 1, deseeded and finely chopped
- Garlic - 2 cloves, finely chopped
- Olive oil - 2 tablespoons
- Linguine - 400 grams
Let's Get Started
- Cook the linguine in a large pot of boiling salted water according to the package instructions.
- Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the garlic and chilli and cook for 1-2 minutes until fragrant.
- Add the prawns and cook for 2-3 minutes until they turn pink. Remove the prawns from the pan and set aside.
- Increase the heat to high, add the wine to the pan and let it bubble for a minute. Add the tomatoes and cook for 2-3 minutes until they start to break down.
- Drain the linguine and add it to the pan with the tomatoes. Add the prawns back into the pan and toss everything together. Cook for a further 2 minutes until everything is heated through.
- Stir in the chopped parsley and season with salt and pepper. Serve immediately.
