Prawn and Feta Salad
This refreshing salad combines succulent prawns with tangy feta cheese and crisp vegetables.
Ingredients - Serves 2
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Feta cheese - 1/2 cup, crumbled
- Red onion - 1/4, thinly sliced
- Cucumber - 1, sliced
- Cherry tomatoes - 1 cup, halved
- Mixed salad greens - 4 cups
- Prawns - 200g
Let's Get Started
- Cook the prawns in boiling water for 2-3 minutes, or until they turn pink. Drain and set aside.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh dill.
