A delicious and healthy vegetable stew made with spring vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Vegetable broth - 4 cups
- Green beans - 1 cup, cut into 1-inch pieces
- Potatoes - 2, diced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, celery, and potatoes and cook until the vegetables are softened, about 5 minutes.
- Add the green beans, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 25 minutes.
