Potato Chowder
This creamy and hearty potato chowder is packed with tender potatoes, vegetables, and bacon.
Ingredients - Serves 6
- Green onions - 2 tablespoons, chopped
- Cheddar cheese - 1 cup, shredded
- Heavy cream - 1 cup
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Chicken broth - 4 cups
- Potatoes - 4 large, peeled and diced
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Onion - 1 medium, diced
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are tender, about 5 minutes.
- Add the diced potatoes, chicken broth, bay leaf, dried thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are cooked through.
- Remove the bay leaf from the pot. Use an immersion blender to partially blend the soup, leaving some chunks of potatoes for texture.
- Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Serve the potato chowder hot, topped with the crispy bacon and chopped green onions.
