Potato Bacon Soup
A hearty, creamy soup made with potatoes, bacon, and a touch of cream. Perfect for a cold day.
Ingredients - Serves 4
- Green onions - 2, chopped
- Cheddar cheese - 1 cup, shredded
- Heavy cream - 1/2 cup
- Salt and pepper - To taste
- Chicken broth - 4 cups
- Potatoes - 4 large, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the grease in the pot.
- Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
- Add the potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Use a blender or immersion blender to puree about half of the soup, leaving some chunks of potato. Return the soup to the pot.
- Stir in the heavy cream, cheddar cheese, and half of the cooked bacon. Cook until the cheese is melted and the soup is heated through.
- Serve the soup topped with the remaining bacon and the chopped green onions.
