Potato Bacon Soup

Ingredients - Serves 4

Let's Get Started

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the grease in the pot.
  2. Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
  3. Add the potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  4. Use a blender or immersion blender to puree about half of the soup, leaving some chunks of potato. Return the soup to the pot.
  5. Stir in the heavy cream, cheddar cheese, and half of the cooked bacon. Cook until the cheese is melted and the soup is heated through.
  6. Serve the soup topped with the remaining bacon and the chopped green onions.
