Porotos Granados
Porotos Granados is a traditional Chilean dish made with cranberry beans, corn, pumpkin, and spices.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Vegetable broth - 4 cups
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Corn kernels - 1 cup
- Pumpkin - 1 cup, diced
- Cranberry beans - 2 cups, soaked overnight
Let's Get Started
- In a large pot, heat olive oil over medium heat.
- Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Add the soaked cranberry beans, pumpkin, corn kernels, cumin, paprika, salt, and pepper. Stir well to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes to 1 hour, or until the beans are tender.
- Remove from heat and stir in the chopped cilantro.
- Serve hot and enjoy!
