Costillitas
Costillitas, or baby back ribs, are a popular dish in Cuban cuisine. They're marinated in a tangy mojo sauce, then slow-cooked until tender and flavorful.
Ingredients - Serves 4
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Lime juice - 1/2 cup
- Orange juice - 1 cup
- Garlic - 6 cloves, minced
- Baby back ribs - 2 racks
Let's Get Started
- In a bowl, combine the minced garlic, orange juice, lime juice, cumin, oregano, salt, and pepper to make the marinade.
- Place the ribs in a large dish and pour the marinade over them. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat your oven to 325°F (165°C).
- Place the ribs on a roasting rack in a roasting pan. Pour the marinade over the ribs.
- Cover the pan with aluminum foil and bake for 2 hours, or until the ribs are tender.
- Remove the foil and increase the oven temperature to 375°F (190°C). Bake for an additional 15 minutes, or until the ribs are browned and crispy.
- Let the ribs rest for a few minutes before serving.
