Pork Tenderloin with Balsamic Glaze

  1. In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper.
  2. Place the pork tenderloin in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the oven to 400°F (200°C).
  4. Heat the olive oil in an oven-safe skillet over medium-high heat. Remove the pork tenderloin from the marinade, allowing any excess marinade to drip off, and place it in the skillet.
  5. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove the pork tenderloin from the skillet and let it rest for 5 minutes before slicing.
  8. While the pork is resting, pour the remaining marinade into a small saucepan and bring it to a boil. Reduce the heat and simmer for 5 minutes, or until the glaze thickens.
  9. Slice the pork tenderloin and drizzle the balsamic glaze over the top. Serve hot and enjoy!
