Let's Get Started

  1. Season the pork hocks with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the pork hocks and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.
  4. Return the pork hocks to the pot. Add the chicken broth, bay leaves, and thyme.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 2 hours, or until the pork is tender.
  6. Remove the bay leaves before serving.
