  1. Preheat the oven to 375°F (190°C).
  2. Score the skin of the pork belly with a sharp knife, making shallow cuts in a crisscross pattern.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, and paprika.
  4. Rub the spice mixture all over the pork belly, including the scored skin.
  5. Heat the vegetable oil in an oven-safe skillet over medium-high heat.
  6. Place the pork belly, skin side down, in the skillet and cook for 5 minutes, or until the skin is crispy and golden brown.
  7. Flip the pork belly and transfer the skillet to the preheated oven.
  8. Roast for 2-3 hours, or until the pork belly is tender and the internal temperature reaches 165°F (74°C).
  9. Remove from the oven and let it rest for 10 minutes before slicing.
  10. Serve the crispy pork belly slices with your favorite side dishes.
