Pork and Green Chili Stew
This hearty pork and green chili stew is packed with tender pork, spicy green chilies, and flavorful spices.
Ingredients - Serves 6
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Vegetable oil - 2 tablespoons
- Flour - 2 tablespoons
- Chicken broth - 4 cups
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 4 cloves, minced
- Onion - 1 large, diced
- Green chilies - 4, roasted and chopped
- Pork shoulder - 2 pounds, cubed
Let's Get Started
- In a large pot, heat the vegetable oil over medium heat.
- Add the pork cubes and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the cumin, oregano, salt, and pepper. Stir to combine.
- Return the pork to the pot and add the roasted and chopped green chilies.
- Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 1.5 to 2 hours, or until the pork is tender.
- In a small bowl, mix the flour with a little water to make a slurry. Stir the slurry into the stew to thicken the broth.
- Simmer for an additional 10 minutes.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Serve hot and enjoy!
