Let's Get Started

  1. Preheat your oven to 325°F (165°C).
  2. Score the skin of the pork belly in a crosshatch pattern.
  3. In a small bowl, combine the minced garlic, chopped rosemary, fennel seeds, salt, and pepper.
  4. Rub the seasoning mixture all over the pork belly, making sure to get it into the scored skin.
  5. Roll the pork belly up tightly and secure with kitchen twine.
  6. Place the rolled pork belly on a rack in a roasting pan and pour the white wine into the bottom of the pan.
  7. Roast for about 4 hours, or until the skin is crispy and the meat is tender.
  8. Let the porchetta rest for 15 minutes before slicing and serving.
