Porchetta Di Ariccia

- White wine - 1 cup
- Black pepper - 1 tablespoon
- Salt - 2 tablespoons
- Fennel seeds - 1 tablespoon
- Rosemary - 2 tablespoons, chopped
- Garlic - 5 cloves, minced
- Pork belly - 5 pounds
Let's Get Started
- Preheat your oven to 325°F (165°C).
- Score the skin of the pork belly in a crosshatch pattern.
- In a small bowl, combine the minced garlic, chopped rosemary, fennel seeds, salt, and pepper.
- Rub the seasoning mixture all over the pork belly, making sure to get it into the scored skin.
- Roll the pork belly up tightly and secure with kitchen twine.
- Place the rolled pork belly on a rack in a roasting pan and pour the white wine into the bottom of the pan.
- Roast for about 4 hours, or until the skin is crispy and the meat is tender.
- Let the porchetta rest for 15 minutes before slicing and serving.
