  1. Preheat the oven to 180°C (350°F).
  2. Rub the lamb with the garlic and salt.
  3. Place the lamb in a roasting pan and add the lard.
  4. Roast the lamb in the oven for 1 hour.
  5. After 1 hour, add the white wine and water to the pan.
  6. Continue roasting for another hour, basting the lamb with the pan juices every 15 minutes.
  7. The lamb is done when it is golden brown and the meat is tender.
  8. Let the lamb rest for a few minutes before carving and serving.
