Lechazo Asado

- Lard - 2 tablespoons
- Salt - To taste
- Water - 1 cup
- White wine - 1 cup
- Garlic - 4 cloves
- Lechazo (milk-fed lamb) - 1 whole
Let's Get Started
- Preheat the oven to 180°C (350°F).
- Rub the lamb with the garlic and salt.
- Place the lamb in a roasting pan and add the lard.
- Roast the lamb in the oven for 1 hour.
- After 1 hour, add the white wine and water to the pan.
- Continue roasting for another hour, basting the lamb with the pan juices every 15 minutes.
- The lamb is done when it is golden brown and the meat is tender.
- Let the lamb rest for a few minutes before carving and serving.
