  1. Heat the olive oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove and set aside.
  2. In the same pot, add the onion and garlic and cook until soft and golden.
  3. Return the chicken to the pot, add the white wine, and let it reduce for a few minutes.
  4. Add the chicken broth and saffron threads, cover, and simmer for about 30 minutes.
  5. In a separate bowl, mix the ground almonds with the egg yolks and a little bit of the hot broth from the pot.
  6. Add this mixture to the pot, stirring well to combine. Cook for another 10 minutes.
  7. Season with salt and pepper, and sprinkle with chopped parsley before serving.
