Pollo en Pepitoria
Pollo en Pepitoria is a traditional Spanish chicken dish, cooked in a flavorful almond and egg yolk sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 2 tablespoons, chopped
- Egg yolks - 2
- Ground almonds - 1/2 cup
- Saffron threads - A pinch
- Chicken broth - 2 cups
- White wine - 1 cup
- Garlic - 4 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Chicken - 1 whole, cut into pieces
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove and set aside.
- In the same pot, add the onion and garlic and cook until soft and golden.
- Return the chicken to the pot, add the white wine, and let it reduce for a few minutes.
- Add the chicken broth and saffron threads, cover, and simmer for about 30 minutes.
- In a separate bowl, mix the ground almonds with the egg yolks and a little bit of the hot broth from the pot.
- Add this mixture to the pot, stirring well to combine. Cook for another 10 minutes.
- Season with salt and pepper, and sprinkle with chopped parsley before serving.
