Po' Boy Sandwich
This classic Louisiana sandwich is made with crispy fried shrimp, lettuce, tomato, and remoulade sauce on a French baguette.
Ingredients - Serves 4
- Vegetable oil - For frying
- Remoulade sauce - 1 cup
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Salt and pepper - To taste
- Cajun seasoning - 2 tablespoons
- Flour - 1/2 cup
- Cornmeal - 1 cup
- Shrimp - 1 pound, peeled and deveined
- French baguette - 4, split lengthwise
Let's Get Started
- Preheat the oven to 350°F.
- In a large bowl, mix together the cornmeal, flour, Cajun seasoning, salt, and pepper.
- Add the shrimp to the bowl and toss to coat.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
- Remove the shrimp from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Place the baguette halves on a baking sheet and toast in the oven for 5 minutes.
- Spread the remoulade sauce on the bottom half of each baguette.
- Top with lettuce, tomato, and the fried shrimp.
- Serve immediately, with additional remoulade sauce on the side.
