Plantain Porridge
This hearty and flavorful plantain porridge is a popular Nigerian dish made with ripe plantains, vegetables, and spices.
Ingredients - Serves 6
- Fresh basil leaves - Handful, chopped
- Seasoning cubes - 2
- Scotch bonnet pepper - 1, chopped
- Ground crayfish - 1 tablespoon
- Salt - To taste
- Smoked fish - 1 cup, flaked
- Spinach - 2 cups, chopped
- Vegetable broth - 4 cups
- Tomatoes - 2 medium, chopped
- Red bell pepper - 1, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Vegetable oil - 2 tablespoons
- Ripe plantains - 4, peeled and diced
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the chopped red bell pepper and tomatoes. Cook until the tomatoes are soft and the mixture thickens.
- Add the diced plantains and stir to coat them with the sauce.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the plantains are tender.
- Add the chopped spinach, flaked smoked fish, salt, ground crayfish, chopped scotch bonnet pepper, and seasoning cubes. Stir well to combine.
- Simmer for another 5 minutes to allow the flavors to meld together.
- Garnish with fresh chopped basil leaves before serving.
