Farro Salad with Grilled Vegetables
A hearty and healthy salad featuring farro, a type of whole grain, and a variety of grilled vegetables.
Ingredients - Serves 4
- Fresh basil leaves - 1/4 cup, chopped
- Feta cheese - 1/2 cup, crumbled
- Black pepper - 1/2 teaspoon
- Balsamic vinegar - 1 tablespoon
- Olive oil - 2 tablespoons
- Yellow bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Zucchini - 1 large, sliced
- Salt - 1 teaspoon
- Water - 3 cups
- Farro - 1 cup
Let's Get Started
- In a medium saucepan, combine the farro, water, and 1/2 teaspoon of the salt. Bring to a boil, then reduce the heat and simmer until the farro is tender, about 30 minutes. Drain any excess water.
- While the farro is cooking, preheat a grill or grill pan to medium heat.
- Toss the zucchini and bell peppers with the olive oil, balsamic vinegar, the remaining 1/2 teaspoon of salt, and the black pepper.
- Grill the vegetables until they are tender and slightly charred, about 10 minutes.
- In a large bowl, combine the cooked farro, grilled vegetables, feta cheese, and basil. Toss to combine.
- Serve the salad warm or at room temperature.
