Farro Salad with Grilled Vegetables

Ingredients - Serves 4

Let's Get Started

  1. In a medium saucepan, combine the farro, water, and 1/2 teaspoon of the salt. Bring to a boil, then reduce the heat and simmer until the farro is tender, about 30 minutes. Drain any excess water.
  2. While the farro is cooking, preheat a grill or grill pan to medium heat.
  3. Toss the zucchini and bell peppers with the olive oil, balsamic vinegar, the remaining 1/2 teaspoon of salt, and the black pepper.
  4. Grill the vegetables until they are tender and slightly charred, about 10 minutes.
  5. In a large bowl, combine the cooked farro, grilled vegetables, feta cheese, and basil. Toss to combine.
  6. Serve the salad warm or at room temperature.
