Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and peppers and cook until they start to soften.
  3. Add the zucchini and eggplant and continue to cook until they start to soften.
  4. Add the tomatoes, salt, and pepper and stir well.
  5. Cover the pot and let it simmer for about 30 minutes, stirring occasionally.
  6. Check the seasoning and add more salt and pepper if needed.
  7. Serve the pisto warm with bread or as a side dish.
