Pisto
Pisto is a Spanish dish originally from the Region of Murcia and Castilla La Mancha. It is made of tomatoes, onions, eggplant or courgettes, green and red peppers, and olive oil.

- Black pepper - To taste
- Salt - To taste
- Tomatoes - 5, peeled and chopped
- Eggplant - 1, chopped
- Zucchini - 2, chopped
- Red bell peppers - 2, chopped
- Green bell peppers - 2, chopped
- Onions - 2, chopped
- Olive oil - 3 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and peppers and cook until they start to soften.
- Add the zucchini and eggplant and continue to cook until they start to soften.
- Add the tomatoes, salt, and pepper and stir well.
- Cover the pot and let it simmer for about 30 minutes, stirring occasionally.
- Check the seasoning and add more salt and pepper if needed.
- Serve the pisto warm with bread or as a side dish.
