Let's Get Started

  1. Preheat the oven to 325°F and line two baking sheets with parchment paper.
  2. In a large bowl, combine the almond flour, powdered sugar, and ground pistachios.
  3. In a separate bowl, beat the egg whites until they form soft peaks. Gradually add the granulated sugar and continue beating until stiff peaks form. Add the food coloring and mix until combined.
  4. Gently fold the dry ingredients into the egg whites until the mixture is smooth and shiny.
  5. Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheets.
  6. Let the macarons sit at room temperature for 30 minutes to develop a skin.
  7. Bake for 15 minutes, or until the macarons are crisp and firm. Let cool completely on the baking sheets.
  8. To make the filling, beat the butter until creamy. Add the pistachio paste and beat until well combined.
  9. Once the macarons are cool, pipe a small amount of the filling onto half of the shells. Top with the remaining shells to form sandwiches.
