Pumpkin Spice Macarons
These Pumpkin Spice Macarons are a delightful treat for autumn. They are filled with a delicious pumpkin spice buttercream that gives them a wonderful flavor.
Ingredients - Serves 24
- Pumpkin spice - 1 teaspoon
- Powdered sugar - 2 cups
- Butter - 1/2 cup
- Pumpkin puree - 1/4 cup
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Pumpkin spice - 1 teaspoon
- Powdered sugar - 1 cup
- Almond flour - 1 3/4 cups
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour, powdered sugar, and pumpkin spice. Process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip. Pipe the batter onto the prepared baking sheets in 1-inch circles, spacing them 1 inch apart.
- Tap the baking sheets on the counter to remove any air bubbles. Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake the macarons for 20 minutes, or until they are set and can be easily lifted from the parchment paper.
- While the macarons are cooling, make the filling. In a large bowl, beat the butter until creamy. Add the pumpkin puree, powdered sugar, and pumpkin spice and beat until smooth.
- Once the macarons are cool, pipe the filling onto one macaron and sandwich with another. Repeat with the remaining macarons.
