Pinto Bean and Veggie Stir Fry
This healthy and flavorful stir fry is packed with protein from pinto beans and loaded with colorful vegetables.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, for garnish
- Green onions - 2, sliced, for garnish
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Red pepper flakes - 1/2 teaspoon
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Broccoli florets - 1 cup
- Carrots - 2, julienned
- Zucchini - 1, sliced
- Bell peppers - 2, thinly sliced
- Pinto beans - 1 can, drained and rinsed
Let's Get Started
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger, and sauté for 1 minute until fragrant.
- Add bell peppers, zucchini, carrots, and broccoli. Stir fry for 5-6 minutes until vegetables are tender-crisp.
- Add pinto beans, soy sauce, red pepper flakes, salt, and pepper. Stir fry for another 2-3 minutes until heated through.
- Serve the stir fry over cooked rice.
- Garnish with sliced green onions and sesame seeds.
