Pinto Bean and Shrimp Tacos
These delicious tacos are filled with seasoned pinto beans and succulent shrimp, topped with fresh salsa and creamy avocado.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Avocado - 1, sliced
- Salsa - 1 cup
- Corn tortillas - 8
- Olive oil - 2 tablespoons
- Taco seasoning - 2 tablespoons
- Shrimp - 1 pound, peeled and deveined
- Pinto beans - 1 can, drained and rinsed
Let's Get Started
- In a skillet, heat olive oil over medium heat.
- Add the shrimp and taco seasoning. Cook until the shrimp are pink and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the pinto beans and cook until heated through, about 2-3 minutes. Season with salt and pepper to taste.
