Pinto Bean and Sausage Soup
This hearty and flavorful soup is made with pinto beans, sausage, vegetables, and spices.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Tomato paste - 2 tablespoons
- Chicken broth - 6 cups
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onion - 1, chopped
- Sausage - 1 pound, sliced
- Pinto beans - 2 cups, dried
Let's Get Started
- Rinse the pinto beans and soak them in water overnight. Drain and rinse before using.
- In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the soaked pinto beans, cooked sausage, chicken broth, tomato paste, cumin, paprika, salt, and pepper to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beans are tender.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with fresh cilantro.
