Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped
- Sour cream - 1/2 cup
- Shredded cheddar cheese - 1 cup
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Jalapeno pepper - 1, seeded and diced
- Red bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Corn kernels - 1 can, drained
- Pinto beans - 2 cans, drained and rinsed
