Pinto Bean and Beef Stuffed Peppers
These delicious stuffed peppers are filled with a flavorful mixture of pinto beans, ground beef, and spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Shredded cheddar cheese - 1 cup
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Tomato sauce - 1 cup
- Cooked pinto beans - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Ground beef - 1 pound
- Bell peppers - 6
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened.
- Add the cooked pinto beans, tomato sauce, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine.
- Simmer the mixture for 5 minutes, then remove from heat.
- Fill each bell pepper with the beef and bean mixture, packing it tightly.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove the foil and sprinkle the shredded cheddar cheese on top of each pepper.
- Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
