Pinto Bean and Bacon Casserole
This hearty and flavorful pinto bean and bacon casserole is a perfect comfort food dish.
Ingredients - Serves 6
- Green onions - 2, sliced (for garnish)
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Worcestershire sauce - 1 tablespoon
- Mustard - 1 tablespoon
- Brown sugar - 2 tablespoons
- Tomato sauce - 1 can (8 oz)
- Pinto beans - 3 cans (15 oz each), drained and rinsed
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Bacon - 8 slices, chopped
Let's Get Started
- Preheat the oven to 350°F.
- In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
- In the same skillet with the bacon grease, sauté the diced onion and minced garlic until the onion is translucent.
- Add the pinto beans, tomato sauce, brown sugar, mustard, Worcestershire sauce, salt, and pepper to the skillet. Stir well to combine.
- Transfer the bean mixture to a casserole dish and spread it evenly.
- Sprinkle the cooked bacon and shredded cheddar cheese over the top of the bean mixture.
- Cover the casserole dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced green onions before serving.
