Pinto Bean and Bacon Casserole

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 350°F.
  2. In a large skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  3. In the same skillet with the bacon grease, sauté the diced onion and minced garlic until the onion is translucent.
  4. Add the pinto beans, tomato sauce, brown sugar, mustard, Worcestershire sauce, salt, and pepper to the skillet. Stir well to combine.
  5. Transfer the bean mixture to a casserole dish and spread it evenly.
  6. Sprinkle the cooked bacon and shredded cheddar cheese over the top of the bean mixture.
  7. Cover the casserole dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Garnish with sliced green onions before serving.
